The cassia is an evergreen, tall slender tree that reaches a hight of about 20 metres, with small white flowers and leathery leaves. Native to south eastern China. For commercial production the cassia is usually cut to form a bush. Cassia oil is a pale yellow, brown oil with a sweet woody, sweet and spicy aroma. Often used in pharmaceutical for products like, mouthwashes, toothpaste etc. Also used in food flavouring, including soft and alcohol drinks. The oil is obtained by steam distillation of the leaves, and also by water distillation of the twigs, stalks, leaves and bark.
